Super Bowl Sunday is a BIG deal. Surely many are anticipating the game itself, but we’re talking about the snacks! Whether you’re planning to celebrate with a group or spend the evening solo, Wendy and Jess of Food Heaven Made Easy, are sharing a few tasty (and healthy) snack ideas for the big day!
These lovely ladies are registered dietitians and BFFs. They have been cooking together for years and they have a truly awesome platform packed with amazing healthy recipes! Below are a few easy grabbable foods that will have your taste buds cheering this upcoming Sunday.
Sriracha Cauliflower Poppers
Serves 4

Ingredients:
For the cauliflower
1 small head of cauliflower
¾ cup oat flower
¾ cup water
1 tablespoon olive oil
For the sriracha sauce
½ cup sriracha
¼ cupp maple syrup
¼ cup water
½ tablespoon apple cider vinegar
1 teaspoon garlic powder
For yogurt dipping sauce
1 cup plain Greek yogurt
1 tablespoon fresh dill, finely chopped
Instructions:
Preheat the oven to 450F.
Remove the core and leaves from the cauliflower
Cut into small florets and set aside.
Blend the oat flour and water until you have a consistent, batter-like consistency.
Add the batter to a bowl, and dip each cauliflower floret into the batter until covered. Shake off excess batter back into the bowl.
Repeat for all of the florets, and add the battered florets to a parchment lined baking sheet
Drizzle olive oil atop, and bake for 30 minutes.
Now let's make our sauce. Add all ingredients to a bowl and mix well with a spoon. Set aside
For the yogurt dipping sauce, mix the dill and yogurt and set aside.
Once the cauliflower is done, lightly dip each floret into the sriracha sauce and add to a serving plate.
Enjoy with the dill yogurt dip, and leave the remaining sriracha sauce aside in case you want to drizzle more on top of the florets!
Note: Best when served immediately
Date + Guava Grilled Cheese
Serves 1

Ingredients:
For the date + guava spread
4 pitted dates, soaked in water for 1 hour
4 small-medium sized guavas
¼ teaspoon ground cinnamon
½ teaspoon chia seeds
For the grilled cheese
½ teaspoon olive oil
¼ small red onion, sliced
½ teaspoon balsamic vinegar
2 slices of bread
1 slice of white cheddar cheese
Instructions:
Slice each guava in half, and scoop out all of the flesh + seeds from within
Add the flesh + seeds to a food processor, along with the rest of the ingredients for the spread
Process until you reach a smooth consistency
Heat the olive oil in a small pan, and add the onion. Sauté for 1-2 minutes, and then add the balsamic vinegar. Put the lid on, and allow to cook for another couple of minutes. Set aside
Layer 1 slice of bread with the date guava paste, 1 slice of cheese, and the cooked onions
Top with another slice of bread, and cook in a grill press for 3-4 minutes or until cheese melts, and the bread has browned.
If you don't have a press, you can also cook on the skillet over low-medium heat for 2-4 minutes on each side, or until cheese melts and the bread has browned
Easy Veggie Pizza
Serves 2

Ingredients:
1 cup of spinach
1/2 cup of broccoli
3 cloves of chopped garlic
1 Trader Joe’s organic pizza crust
2 tablespoons of pizza sauce
1/2 cup of grated mozzarella
1/4 teaspoon of olive oil
Instructions:
Preheat oven to 425
Chop garlic, onion and veggies into smaller pieces and sauté in olive oil for 3 to 5 minutes or until they become a pretty bright green
Add pizza sauce to crust
Add fresh veggies
Add cheese
Bake for 12 to 15 minutes
Add garlic salt and fresh cracked black pepper to taste. Enjoy!

Dark Rum Hot Toddy
Serves 1

Ingredients:
¾ cup water
1 green tea bag
1 oz dark rum
Juice of ¼ lemon
2-3 teaspoons of honey
Optional: Cinnamon stick for garnish
